Short Crust Pastry and Biscuits

The light, crispness of short crust pastry depends very largely on how it is made and baked. Coolness of ingredients and very light handling with the fingertips are necessary for good results. The fat must be rubbed in until no lumps remain and the flour looks like fine breadcrumbs. The hands should lift the flour up well above the mixing bowl so that air is incorporated into the mixture.

The addition of the liquid is very important. It should be added all at once and mixed in very quickly with a table knife or palette knife. The gradual addition of water will give an uneven textured pastry. In rich short crust pastry or biscuit pastry where egg yolk is added, the egg yolk should be mixed with water before adding to the flour, otherwise it will not mix evenly and this will result in hard streaks in the pastry.

Folding Snack Trays

Pastry dough should hold together loosely and leave the bowl clean. It should be turned out and very lightly kneaded. This is done by folding the edges into the center very lightly, using only the fingertips, to get a smooth, even dough. The dough should then be rolled with short, light strokes. Poor rolling will give hard pastry. Very little flour is needed for dredging the pastry board and rolling pin to prevent sticking. If too much flour is used for dredging, the proportion of fat to flour will be altered and this will cause the pastry to be dry and hard. Always roll with straight forward strokes, rolling straight away from you and straight towards you. To keep the pastry a good shape and also to prevent sticking, lift the pastry on the rolling pin and turn it a quarter ways round, i.e. turn the pastry so that the sides become the top and bottom. Never turn pastry upside down to roll it on both sides. This will make the pastry tough.

Pastry can be cut with a sharp, floured knife, cutting with clean strokes without dragging the pastry, or with floured cutters. Use plain cutters for savories and fluted cutters for sweet dishes. After cutting and shaping, let the pastry relax for at least 10 minutes in a cool place before cooking it. This allows the gluten which has been stretched in the making and rolling of the pastry to relax. If this is not done, the stretched pastry will shrink badly during cooking.

Bake pastry in ungreased trays. Greasing is unnecessary as pastry is firm dough containing a fair amount of fat which will prevent sticking. Pastry to be baked should be glazed with beaten egg or beaten egg mixed with water or milk. Glaze only the top part of pastry, never the cut edges. Bake in the top part of a hot oven (425ºF for 15 minutes) to allow the pastry to set. The temperature is then reduced to 375ºF so that the pastry will cook thoroughly without over browning.

Pastry to be fried should be rolled thinner than pastry to be used for baking. The frying must be done slowly in lightly smoking oil so that the pastry will cook thoroughly. Quick cooking of pastry will cause the pastry to brown too quickly before the pastry is cooked thoroughly.

Reason for Unsuccessful Pastry:

1. Tough and hard pastry
(a) The fat was melted while rubbing in.
(b) The pastry had too much water added to it with the result that more flour had to be added, so the proportion of fat to flour was upset.
(c) The pastry was kneaded and handled too much.
(d) The rolling was too heavily done.
(e) The pastry was rolled on both sides.
(f) The pastry was cooked for too long in an oven that was not hot enough.

2. Crumbly pastry
(a) The pastry was made with the wrong proportion of fat to flour. Too much fat was used, resulting in a pastry that is too rich.
(b) The pastry was mixed with insufficient water to bind it well.
(c) The pastry was over handled and had oiled.
(d) The pastry was rolled out with too much flour used for dredging.

3. Blistered pastry
(a) The fat was not well rubbed in.
(b) The water was added too gradually.
(c) The pastry was not kneaded sufficiently to blend the ingredients sufficiently and to distribute the air evenly.
(d) The pastry was cooked too near the top of the oven which was too hot.
(e) The pastry was fried in oil which was too hot.

4. Shrunken and badly shaped pastry
(a) The pastry dough was too soft.
(b) The pastry was stretched during rolling.
(c) The pastry was stretched during shaping or lining.
(d) The pastry was badly handled and poorly shaped.
(e) The pastry was not left to relax before cooking.

This may take a bit of getting used to and is just a matter of adjusting the browning levels until we find the one we like.

Try these out with this simple and easy recipes for cake and biscuits. It is surprising how little time it takes to prepare such satisfying favorites as cheese cakes, coconut tarts, peanut biscuits, coconut biscuits, peanut puffs and curry puffs.

Cheese Cakes Recipe

Folding Snack Trays

Pastry:
4 oz. flour
2 oz. margarine
1 tablespoon raspberry jam
cold water
Cake mixture:-
2 oz. flour, castor
sugar and margarine
1 egg
½ teaspoon baking powder
½ teaspoon vanilla

Method:
1. Sieve the flour for the pastry into a mixing bowl,rub in the margarine and make short crust pastry.
2. Roll out the pastry 1/10" thick and cut into rounds with a fluted cutter. Make 10-12 rounds.
3. Line the patty tins with the rounds of pastry and leave them aside to relax.
4. Cream the margarine and sugar for the cake mixture until light and fluffy.
5. Add in the beaten egg gradually and beat well.
6. Add in the vanilla.
7. Sieve the flour together with the baking powder and fold it into the creamed mixture.
8. Put a little jam into each pastry case and spoon the cake mixture over it.
9. Bake in a hot oven, at 400ºF, for 20 to 25 minutes.
10. When the cakes are nicely browned, cool them on a wire tray before serving them on a doily.

Coconut Tarts Recipe

Ingredients:
4 oz. short crust pasty
1 tablespoon raspberry jam
Filling:-
2 oz. margarine
castor
sugar
grated coconut
1 egg
½ teaspoon vanilla

Method:
1. Make short crust pastry and line 10 to 12 patty tins with it.
2. Cream the margarine and sugar till it is light and fluffy.
3. Beat in the eggs gradually and add in the vanilla.
4. Mix in the grated coconut.
5. Put a little jam in each pastry case and cover it with the coconut mixture.
6. Place crossed strips of pastry on top and bake in a hot oven, at 400ºF for 20 to 25 minutes.
7. When tarts are brown and well cooked, cool them on a wire tray before serving them on a doily.

Peanut Biscuits Recipe

Ingredients:
4 oz. flour
2 oz. margarine
1½ oz. castor sugar
1 oz. peanut (lightly fried, skinned and chopped)
½ teaspoons vanilla

Method:
1. Grease two baking sheets.
2. Sieve the flour into a mixing bowl and rub in the margarine.
3. Sieve the chopped peanuts. Keep the big pieces aside and add the finely chopped nuts to the flour.
4. Add the sugar and mix well.
5. Separate the egg and add 2 teaspoons of water and the vanilla to the egg yolk.
6. Add the egg mixture to the flour and mix quickly into a stiff dough. Add more water if necessary.
7. Knead the dough lightly on a pastry board, and roll it out to â...>" thick.
8. Cut into rounds or rings with fluted cutters. Lift the biscuits carefully with a table or palette knife on the baking sheets.
9. Brush the top with egg white and sprinkle the remaining peanuts on top.
10. Bake the biscuits for 15 to 20 minutes in a moderate oven, at 350ºF, until they are a pale brown color.
11. Cool the biscuits for minute or two on baking sheets before lifting them on to a wire tray to cool them further. Store biscuits in an airtight tin.

Coconut Biscuits Recipe

Ingredients:
4 oz. flour
2 oz. margarine
1 oz. desiccated coconut
1½ oz. castor sugar
1 egg
1 teaspoon vanilla

Methods:
1. Grease two baking sheets.
2. Sieve the flour into a mixing bowl and rub in the margarine.
3. Add the sugar and the coconut and mix well.
4. Separate the egg and add 1 tablespoonful of water and the vanilla to the egg yolk.
5. Add the egg mixture to the flour and mix into a stiff dough.
6. Knead the dough lightly and roll it out to â...>" thickness.
7. Prick the dough well with a fork.
8. Cut the dough into neat fingers or rounds and lift them carefully on the greased baking trays.
9. Glaze the biscuits with egg white and bake in a moderate oven, at 350ºF, for 15 to 20 minutes.
10. When the biscuits are cooked and are a pale brown color, take them out, leave them for a couple of minutes before lifting them on to a wire tray to cool.
11. Store cool biscuits in an airtight tin.

Peanut Puffs Recipe

Ingredients:
4 oz. short crust pastry
3 tablespoon fried peanuts
3 teaspoons fried gingelly seeds
3 teaspoons castor sugar

Methods:
1. Make short crust pasty, roll out to 1/10" thickness and cut into rounds with a plain cutter.
2. Chop up the peanuts and mix it with the sugar and gingelly seeds.
3. Put an equal amount of filling on each round of pastry, wet the edge of the pastry and fold it over to make a puff.
4. Seal the edge by pressing it together with a fork or by folding the pastry over to get a twisted edge.
5. Fry the peanut puffs slowly in lightly smoking oil till brown.
6. Drain well and serve on a doily.

Curry Puffs Recipe

Ingredients:
4 oz. short crust pastry
75 gram meat or 115 gram prawns
1 potato
1 tablespoon curry powder
½ Bombay onion
2 onions
a few curry leaves
salt
oil

Methods:
1. Wash and mince the meat or shell and dice the prawns.
2. Peel, wash and dice the potato and Bombay onion.
3. Peel, wash and chop up the onions.
4. Heat up 1 tablespoon of oil and fry the chopped onions.
5. Add the curry leaves and curry powder and fry for 2 to 3 minutes.
6. Add the meat or prawns and fry for another minute or two.
7. Add the potato, salt and ½ cup water. Cover and cook until the potato is soft and the filling is dry. Season well and cool the filling on a plate.
8. Make the short crust pastry, roll out to 1/10" thickness and cut it into rounds.
9. Put an equal amount of the cooled filling on each round of pastry, wet the edges of the pastry rounds, fold over to make the curry puffs.
10. Seal the edge of each puff with a twisted edge.
11. Fry the puffs slowly in lightly smoking oil till the pastry is thoroughly cooked. Drain well and serve with a sprig of parsley.

These models are made for newborns who can't sit up on their own yet. For that reason, this sort of stroller is not equipped with an adjustable seat. In fact, there isn't a seat! It lays flat and designed to carry a newborn car seat for any walk-abouts you wish to do. No need waking up the baby either. Simply transport the car seat directly to the stroller and off you go!

Combo Strollers

"Combos" - are a carriage and stroller in one. This kind of design can be used with a brand new infant. They are designed to carry your baby laying flat in either a car seat or bassinet.

In theory, you'll be able to use this sort of stroller from birth up through the toddler years. (It supports around 40 pounds). And when the baby gets older, you can use the adjustable seat attachment for the correct sitting setup. These strollers can get rather expensive though, priced all the way to 0. But for this high dollar you get plenty of options such as additional storage space for extra baby gear and large canopies for protection from the sun and rain.

Travel System Strollers

For mobility, these units are awesome! Babies who aren't capable of sitting up can be moved right in their car seat, which securely fastens right to the stroller. When it's time to head back to the car, simply raise the seat off the stroller and snap it into the car's safety belt system. Very convenient!

Old Fashioned Baby Buggies

These 'old school' models of strollers are still seen today. They usually have spoked-wheels and lots of room for baby and all that baby gear. Carriages are perfect for newborns and a few models have removable 'carrying cots'.

The not-so-good news is that carriages are pretty big, cumbersome and not overly maneuverable. They're particularly awkward to use in crowed city environments where you will encounter quite a few obstacles to contend with. Still, if 'old fashion' appeals to you, these strollers are big and roomy and provide a touch nostalgia for the past.

Traditional strollers are in the 'everything including the kitchen sink' class. Traditional strollers vary from lightweight designs all the way to massive, industrial-strength models.

The 'ironman' models are made with deep compartments and plenty of room. They have designed-in shock absorbers on all 4 wheels and are manufactured to withstand plenty of punishment. But they're bulky. Yes, they are firm and stable, but rather massive.

There are several features found in traditional strollers like snack trays, lots of baby gear storage, one-handed folding capabilities, and adjustable seating. Some are actually all-in-one models and might be designed to work with bassinets and car seats. But they do have a tendency to be a bit on the heavy side so traveling with them is more of a task.

Umbrella Strollers

Umbrella strollers are aptly named due to their handles that resemble those on an umbrella. These strollers are extraordinarily lightweight and very convenient for traveling. Most umbrella strollers fold easily but the ride tends to be a bit rough (depending on the terrain). Umbrellas make a great spare stroller and their priced very reasonably.

All-Terrain Strollers

While on the topic of terrain, we like to take our babies EVERYWHERE we tend to go! Including off road. This can be where an all-terrain stroller earns its keep.

These strollers are heavy-duty and can take the punishment due to oversized bicycle-like tires. And yes, they are inflatable! And these strollers are equipped with 3 of them. Bicycle-like tires give the baby a gentler ride. Plus they're capable of handling heavier loads which makes them ideal for 'larger' babies and also when you're transporting extra baby gear.

Jogging strollers

Since we include our babies in many of our activities, we need a stroller that is as mobile as we are. You can find strollers especially made for active parents who wish to include their little ones with them on their runs.

A stroller designed for jogging is a three-wheeled apparatus with oversized, air-filled tires. These strollers have extra long handles which positions the stroller a little more out in front of the jogger so running legs have ample space to move and not be hindered by the stroller frame.

Safety features on this kind of stroller come with a front brake and a wrist strap so everything stays in control at all times. This being extremely important. Their rugged design allows the stroller to go off the beaten path like an all-terrain stroller.

How to Lose Weight

Anyone who is wondering how to lose weight needs to understand that it is possible if you know what you are doing. Many people who are first trying to drop some weight have no idea what to do. I am in no way a doctor and the information and tips that I provide in this article are from my research online and some of the techniques that I have used in my personal journey. First of all many people who are trying to lose weight have no idea what to do and they go about it the wrong way; I personally know this because I was one of them.

If you are the type of person who does not eat breakfast because you do not think you have time for it; then it is time to begin changing that habit. Breakfast is one of the most important meals of the day. Your body has been asleep for 8 hours or more and your stomach is empty. When you eat breakfast it gives your body the energy it requires to kickstart the day and will prevent you from over eating later on at another meal. You should attempt to eat meals that consist of cereals and fruits; these are quick and are very good for you.

Another thing you should do is quit eating 3 large meals. Most people believe that we should be eating three meals; however research has found that it is much better to snack throughout the day as this is better for building metabolism for the body. The metabolism is what burns your body's fat and then you will begin to notice that you will start to lose weight.

One more important thing that I noticed that was quite easy to do and fun in my opinion; is walking for at least 30-45 minutes per day. I found that as I did this my legs and buttocks started to look better and I was in better shape; besides I enjoyed the nice peaceful walks by myself. You can either choose to go with yourself or start off with a buddy who will keep you motivated.

I have found that most people require motivation to begin exercising because it is not something that we like to do; however just remember the hardest part is beginning to exercise. Once you have gotten into a routine of doing it on a daily basis you will see how easy it is to continue that lifestyle.
